Our organic Sifted Durum will add a warm, rich flavor and aroma to your sweet and savory baked goods. This finely milled flour is sometimes called "extra fancy durum flour" or "semolina rimacinata" (twice-milled semolina). It's perfect for yeast and sourdough breads, as well as for finer-textured pasta, and rustic cookies or cakes. We mill this flour from Durum, an ancient grain closely related to Emmer. It's very high in protein, but has lower gluten potential than our High-Protein Flour.
You can substitute Sifted Durum for Italian-Style Pizza Flour or your favorite bread flour in most recipes.
